#nutrition Who remembers “Fear Factor” or “Survivor”? Did it gross you out when they were asked to eat insects? Turns out that crunchy exoskeleton might be good for you. The study is much more geared to finding ways to combat obesity but, they are looking at that through the lens of a robust immune system. So, if you had to eat a crunchy insect – which one would you choose?
“The researchers, led by Steven Van Dyken, PhD, an assistant professor of pathology & immunology, found in mice that digesting chitin, an abundant dietary fiber in insect exoskeletons and also mushrooms and crustacean shells, engages the immune system. An active immune response was linked to less weight gain, reduced body fat and a resistance to obesity.”
